Ingredients
To create the perfect Coconut Mojito, you’ll need:
-
2 oz white rum 🥃 – Choose a clean-tasting, light-bodied white rum. Brands like Bacardi or Havana Club work well.
-
1 oz cream of coconut 🥥 – Not to be confused with coconut milk or coconut cream. Look for brands like Coco Lopez for the sweet, thick version.
-
1 oz fresh lime juice 🍋 – Freshly squeezed is best to bring brightness and cut through the creaminess.
-
1/2 oz simple syrup 🍯 – Adjust to taste depending on how sweet you like your drinks. You can also use agave or coconut syrup.
-
6–8 fresh mint leaves 🌿 – Provides the classic mojito flavor and aroma.
-
Club soda to top 💧 – Adds the essential sparkle and balances the cocktail.
-
Ice 🧊 – Crushed or cubed, depending on your preference.
-
Garnish: Mint sprig and lime wheel – For that finishing touch of beauty and freshness.
Instructions
Step 1: Muddle the Mint
In a sturdy highball glass, add the fresh mint leaves and simple syrup. Use a muddler (or the back of a wooden spoon) to gently press the mint to release its oils. Avoid pulverizing it — you want an aromatic infusion, not bitterness.
Step 2: Add the Lime and Coconut
Pour in the fresh lime juice and cream of coconut. Stir gently to combine and dissolve the cream into the mixture. This creates the creamy foundation of the drink.
Step 3: Pour the Rum
Add the white rum. Stir again to blend all the elements — minty, sweet, citrusy, and boozy — into a unified base.
Step 4: Add Ice
Fill the glass with ice cubes or crushed ice, leaving enough room at the top for the soda.
Step 5: Top with Club Soda
Slowly pour the club soda over the top until the glass is full. Stir very gently to combine the soda without flattening the bubbles.
Step 6: Garnish and Serve
Add a fresh mint sprig and a lime wheel for garnish. Optionally, a dusting of toasted coconut flakes or a rim dipped in shredded coconut can make it extra festive.
Serve immediately with a straw or cocktail stirrer — and enjoy the tropical escape in a glass!
Notes
The Coconut Mojito is a great example of a “hybrid cocktail” — one that takes inspiration from multiple classics and creates something new. It’s essentially a cross between a Pina Colada and a Mojito, but it maintains enough of both identities to appeal to fans of either. The cream of coconut is the secret weapon: it adds body, tropical flavor, and a sweet base that plays off the lime and mint’s sharper notes.
