Ingredients
Here’s everything you need to make the Coconut Sunset:
-
1 1/2 oz coconut rum (Malibu or your preferred brand)
-
2 oz pineapple juice
-
1 oz orange juice (freshly squeezed if possible)
-
1/2 oz grenadine (for that signature sunset layer)
-
Ice
Garnish Options:
-
Orange slice
-
Maraschino cherry
-
Pineapple wedge (optional for extra flair)
Instructions
Step 1: Fill Your Glass
Grab a tall glass (like a hurricane or highball glass) and fill it with fresh ice. The ice will help create the separation needed for the “sunset” effect.
Step 2: Combine Main Ingredients
In a shaker or directly in the glass:
-
Pour in the coconut rum
-
Add pineapple juice
-
Add orange juice
Stir gently to combine. If you prefer a well-chilled mix, give it a few shakes in a cocktail shaker before pouring it over the ice.
Step 3: Add the Grenadine
Slowly pour the grenadine into the drink by tilting the glass slightly and pouring it down the side or using the back of a spoon. The grenadine will sink and gradually rise through the drink, creating a stunning sunset gradient.
Step 4: Garnish and Serve
Top it off with an orange slice and maraschino cherry. A cocktail umbrella or tropical stir stick never hurts!
Notes
The Coconut Sunset isn’t a classic tiki cocktail with a long heritage—it’s a modern creation that borrows the best of beachside mixology: rum, fruit, fun, and flair. It gets its name not just from the coconut base but also from the beautiful sunset effect that the grenadine creates as it drifts through the juice.
This drink is all about vibe. Think Caribbean breeze, golden hour, and steel drums. It’s less about tradition and more about pleasure in the moment.
