Ingredients

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the carrots by washing, peeling, and cutting them into uniform pieces, about 1-2 inches long.
  3. Toss the carrots in a large mixing bowl with olive oil, rosemary, thyme, parsley, salt, and pepper until evenly coated.
  4. Spread the carrots on a rimmed baking sheet in a single layer.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through for even browning.
  6. Serve the carrots warm, drizzled with extra olive oil and a sprinkle of flaky sea salt.
