Description

This Comforting French Onion Pot Roast is a hearty dish that envelops your senses with its rich, savory aroma and tender, melt-in-your-mouth beef. The caramelized onions add a sweet depth, while the robust broth creates a warm, inviting flavor that lingers on the palate.

Ingredients

  • Beef Chuck Roast: 3-4 pounds, trimmed
  • Onions: 4 large, thinly sliced
  • Garlic: 4 cloves, minced
  • Beef Broth: 4 cups
  • Red Wine: 1 cup, preferably dry
  • Thyme: 2 teaspoons, dried
  • Bay Leaves: 2
  • Olive Oil: 2 tablespoons
  • Salt: 1 teaspoon, to taste
  • Pepper: 1 teaspoon, to taste
  • Butter: 2 tablespoons, for sautéing

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned, about 4-5 minutes per side.
  3. Remove the roast and set aside. In the same pot, add butter and sauté the sliced onions until they are caramelized, about 15-20 minutes.
  4. Add minced garlic and cook for an additional minute until fragrant.
  5. Pour in the red wine, scraping the bottom of the pot to deglaze, and let it simmer for 5 minutes.
  6. Return the roast to the pot, add beef broth, thyme, and bay leaves. Bring to a gentle simmer.
  7. Cover the pot and transfer it to the preheated oven. Cook for 3-4 hours, or until the meat is fork-tender.
  8. Remove from the oven, discard bay leaves, and let the roast rest for 10 minutes before slicing.

Notes

  • This pot roast can be made a day in advance; simply reheat gently on the stove before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a gluten-free option, ensure the beef broth and wine are gluten-free.
