Description

A delicious and creamy chicken and gnocchi soup inspired by Olive Garden, made easy for home cooking.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery; sauté until softened.
  3. Stir in Italian seasoning and cook for another minute.
  4. Add chicken broth and bring to a boil.
  5. Stir in the gnocchi and cook according to package instructions.
  6. Reduce heat and add heavy cream, cooked chicken, and spinach.
  7. Season with salt and pepper to taste.
  8. Simmer for a few minutes until heated through.
  9. Serve hot and enjoy!

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
