Description

A delicious and creamy copycat version of Panera’s famous Broccoli Cheddar Soup, perfect for a comforting meal.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and cook for an additional minute.
  3. Stir in broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  4. Using an immersion blender, blend the soup until smooth, or transfer to a blender in batches.
  5. Return the soup to the pot and stir in heavy cream, shredded cheddar cheese, salt, pepper, and nutmeg.
  6. Cook over low heat until the cheese is melted and the soup is heated through.
  7. Serve hot, garnished with additional cheese if desired.

Notes

  • For a thicker soup, blend more of the broccoli.
  • Feel free to add carrots or other vegetables for extra flavor.
  • This soup can be stored in the refrigerator for up to 3 days.
