Description
A delicious and creamy copycat version of Panera’s famous Broccoli Cheddar Soup, perfect for a comforting meal.
Ingredients

- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 2 cups vegetable broth
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Add minced garlic and cook for an additional minute.
- Stir in broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
- Using an immersion blender, blend the soup until smooth, or transfer to a blender in batches.
- Return the soup to the pot and stir in heavy cream, shredded cheddar cheese, salt, pepper, and nutmeg.
- Cook over low heat until the cheese is melted and the soup is heated through.
- Serve hot, garnished with additional cheese if desired.
Notes
- For a thicker soup, blend more of the broccoli.
- Feel free to add carrots or other vegetables for extra flavor.
- This soup can be stored in the refrigerator for up to 3 days.
