A creamy and customizable crustless quiche made with cottage cheese, eggs, and your choice of vegetables or meats.

- 6 large eggs
- 1 cup whole milk cottage cheese
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/2 cup grated cheese (optional)
- Up to 1 cup choice of vegetables and proteins (bell peppers, spinach, mushrooms, bacon, or ham)
Instructions
- Preheat your oven to 350°F (175°C).
- Spray a 9-inch baking dish with oil.
- In a blender or food processor, blend the eggs, cottage cheese, salt, and pepper until smooth.
- Stir in the grated cheese and your chosen vegetables/proteins.
- Mix thoroughly and pour the mixture into the prepared baking dish.
- Bake for about 45 minutes, or until the center is set and the edges are golden brown.
- Allow to cool slightly before slicing and serving.
Notes
Store leftovers in an airtight container for up to 3 days in the fridge. You can freeze slices for up to two months. Reheat in the microwave or oven.
