    • 1 1/2 cups all-purpose flour
    • 1/2 cup unsalted butter, chilled and cubed
    • 1/4 cup granulated sugar
    • 1/4 teaspoon salt
    • 1/4 cup cold water
  • Filling:
    • 8 ounces brie cheese, rind removed and cut into slices
    • 1 cup fresh cranberries
    • 1/2 cup brown sugar
    • 1 tablespoon fresh rosemary, chopped
    • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Add cold water, one tablespoon at a time, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface to fit a 9-inch tart pan. Press into the pan and trim the edges.
  5. Layer the brie slices evenly over the crust.
  6. In a saucepan, combine cranberries, brown sugar, rosemary, and balsamic vinegar. Cook over medium heat until cranberries burst and mixture thickens, about 5-7 minutes.
  7. Spread the cranberry mixture over the brie in the tart.
  8. Bake for 25-30 minutes or until the crust is golden and the cheese is bubbly. Let cool slightly before serving.
