Ingredients
Scale
- 2 pounds fresh spinach
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Nutmeg (optional)
Instructions
- Bring a large pot of salted water to a rolling boil. Add the spinach and cook for approximately 2–3 minutes until the leaves wilt down. Carefully drain and set aside.
- Rinse the spinach under cold water right after draining to stop the cooking process.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about one minute.
- Stir in the heavy cream and gently bring to a simmer, watching as it thickens.
- Add the drained spinach back into the skillet and mix well.
- Gradually stir in the grated Parmesan cheese, season with salt, pepper, and a pinch of nutmeg.
- Cook everything together for an additional 2–3 minutes until heated through.
- Serve warm, scooping portions into bowls.
Notes
Make-ahead tips: Prepare the spinach and cream separately, then mix and reheat before serving. Avoid overcooking the spinach to maintain its vibrant color.
