- 8 oz pasta of choice
- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup heavy cream or coconut cream for a vegan option
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed butternut squash with olive oil, salt, and pepper, and spread it on a baking sheet.
- Roast the squash for 25-30 minutes until tender.
- In a large pot, cook the pasta according to package instructions.
- In a skillet, sauté the onion and garlic until translucent.
- Add the roasted butternut squash and vegetable broth to the skillet, and blend until smooth.
- Stir in the cream and heat through.
- Combine the pasta with the sauce and mix well.
- Serve hot, garnished with fresh parsley.
Notes
- For a vegan option, use coconut cream instead of heavy cream.
- Feel free to add spinach or kale for extra nutrition.
