Ingredients

- 1 lb shrimp, peeled and deveined
- 1 cup rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion, bell pepper, and garlic; sauté until softened.
- Stir in the shrimp and Cajun seasoning; cook until shrimp are pink.
- Add rice and chicken broth; bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Stir in heavy cream and cook for an additional 5 minutes.
- Season with salt and pepper to taste before serving.
Notes
- For a spicier dish, add more Cajun seasoning.
- Can substitute shrimp with chicken or tofu for a different protein.
- Leftovers can be stored in the refrigerator for up to 3 days.
