- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup corn (frozen or canned)
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until browned and cooked through.
- Add chopped onion and minced garlic, sauté until onion is translucent.
- Stir in enchilada sauce, heavy cream, corn, cumin, salt, and pepper.
- Bring to a simmer and cook for 5-7 minutes until the sauce thickens.
- Stir in shredded cheese until melted and well combined.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier version, add diced jalapeños.
- Can substitute chicken with shredded rotisserie chicken for quicker preparation.
