Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup corn (frozen or canned)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through.
  3. Add chopped onion and minced garlic, sauté until onion is translucent.
  4. Stir in enchilada sauce, heavy cream, corn, cumin, salt, and pepper.
  5. Bring to a simmer and cook for 5-7 minutes until the sauce thickens.
  6. Stir in shredded cheese until melted and well combined.
  7. Garnish with fresh cilantro before serving.
