Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the shredded chicken, chicken broth, enchilada sauce, black beans, corn, cumin, chili powder, salt, and pepper.
