Crispy Lentil Falafel Wraps are a delicious and healthy meal option, packed with flavor and nutrients.


Ingredients

  • 1 cup lentils, rinsed
  • 1/2 cup breadcrumbs
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped
  • Oil for frying
  • 4 whole wheat wraps
  • 1 cup lettuce, shredded
  • 1 tomato, sliced
  • 1/2 cucumber, sliced
  • Hummus or tahini for spreading

Instructions

  1. Cook the lentils in boiling water until tender, about 20 minutes. Drain and let cool.
  2. In a bowl, combine the cooked lentils, breadcrumbs, onion, garlic, cumin, coriander, salt, pepper, and parsley. Mix well.
  3. Form the mixture into small patties.
  4. Heat oil in a frying pan over medium heat. Fry the patties until golden brown on both sides.
  5. Warm the whole wheat wraps in a dry pan or microwave.
  6. Spread hummus or tahini on each wrap.
  7. Add lettuce, tomato, cucumber, and the crispy lentil patties to the wraps.
  8. Roll up the wraps tightly and serve immediately.

Notes

  • For a spicier version, add chili powder to the lentil mixture.
  • These wraps can be served with a side of yogurt or a salad.
  • Leftover falafel can be stored in the refrigerator for up to 3 days.
