Ingredients

- 1 cup lentils, rinsed
- 1/2 cup breadcrumbs
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley, chopped
- Oil for frying
- 4 whole wheat wraps
- 1 cup lettuce, shredded
- 1 tomato, sliced
- 1/2 cucumber, sliced
- Hummus or tahini for spreading
Instructions
- Cook the lentils in boiling water until tender, about 20 minutes. Drain and let cool.
- In a bowl, combine the cooked lentils, breadcrumbs, onion, garlic, cumin, coriander, salt, pepper, and parsley. Mix well.
- Form the mixture into small patties.
- Heat oil in a frying pan over medium heat. Fry the patties until golden brown on both sides.
- Warm the whole wheat wraps in a dry pan or microwave.
- Spread hummus or tahini on each wrap.
- Add lettuce, tomato, cucumber, and the crispy lentil patties to the wraps.
- Roll up the wraps tightly and serve immediately.
Notes
- For a spicier version, add chili powder to the lentil mixture.
- These wraps can be served with a side of yogurt or a salad.
- Leftover falafel can be stored in the refrigerator for up to 3 days.
