- 1 teaspoon black pepper
- 1 tablespoon olive oil

- 1 cup fresh orange juice
- 1/2 cup honey
- 1 tablespoon soy sauce
- 1 teaspoon grated fresh ginger
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the duck dry with paper towels and score the skin in a diamond pattern, being careful not to cut into the meat.
- Rub the duck all over with salt, pepper, and olive oil.
- Place the duck on a roasting rack in a roasting pan and roast for 1 hour.
- While the duck is roasting, combine the orange juice, honey, soy sauce, and ginger in a saucepan over medium heat. Bring to a simmer.
- After 1 hour, brush the duck with the orange glaze and continue roasting for an additional 30-40 minutes, basting every 10 minutes, until the skin is golden brown and crispy.
- Remove the duck from the oven and let it rest for 15 minutes before carving.
- In the saucepan, add the cornstarch mixture to the glaze and cook until thickened, about 2-3 minutes. Serve the glaze alongside the duck.
Notes
- This dish can be made ahead by roasting the duck and reheating it in the oven at 350°F (175°C) for 15-20 minutes before serving.
- Store leftover duck in an airtight container in the refrigerator for up to 3 days.
