Description

These Crispy Sweet Potato & Red Lentil Patties are a delightful fusion of flavors and textures. The exterior is perfectly golden and crunchy, while the inside is soft and creamy, bursting with the natural sweetness of sweet potatoes and the earthy notes of red lentils.


Ingredients

  • Sweet Potatoes: 2 medium, peeled and cubed
  • Red Lentils: 1 cup, rinsed
  • Onion: 1 small, finely chopped
  • Garlic: 2 cloves, minced
  • Fresh Parsley: 1/4 cup, chopped
  • Ground Cumin: 1 teaspoon
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Olive Oil: for frying
  • Breadcrumbs: 1/2 cup, for coating

Instructions

  1. In a pot, bring 2 cups of water to a boil and add the rinsed red lentils. Cook for about 15 minutes until soft, then drain and set aside.
  2. In a separate pot, boil the cubed sweet potatoes for 10-12 minutes until tender. Drain and mash them in a large bowl.
  3. Add the cooked lentils, chopped onion, minced garlic, parsley, cumin, salt, and pepper to the mashed sweet potatoes. Mix until well combined.
  4. Form the mixture into patties, about 2 inches in diameter.
  5. Coat each patty in breadcrumbs for extra crunch.
  6. Heat olive oil in a skillet over medium heat. Fry the patties for 4-5 minutes on each side until golden brown.
  7. Remove from the skillet and place on paper towels to absorb excess oil.
  8. Serve warm and enjoy!
