Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • 1 cup salsa
  • 6 tortillas, cut into strips

Instructions

  1. In a skillet, brown the ground beef over medium heat until fully cooked.
  2. In the Crockpot, combine the cooked ground beef, black beans, corn, diced tomatoes, taco seasoning, and salsa.
  3. Layer the tortilla strips on top of the mixture.
  4. Sprinkle shredded cheese over the top.
  5. Cover and cook on low for 4-6 hours or until heated through and cheese is melted.
