Ingredients

  • 1/2 cup of unsalted butter, melted
  • 1 cup of dark chocolate chips
  • 1/2 cup of heavy cream
  • 2 tablespoons of espresso powder
  • 3 large eggs
  • 1/2 cup of granulated sugar
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed chocolate cookies with melted butter and press into the bottom of a tart pan.
  3. In a saucepan, heat heavy cream until just simmering, then remove from heat and add dark chocolate chips and espresso powder, stirring until smooth.
  4. In a separate bowl, whisk together eggs, sugar, and vanilla extract until well combined.
  5. Combine the chocolate mixture with the egg mixture and stir until fully incorporated.
  6. Pour the filling into the prepared crust and bake for 25-30 minutes.
