Ingredients
- Green Beans: 1 pound fresh green beans, trimmed and cut into 2-inch pieces
- Mushroom Sauce: 2 tablespoons unsalted butter, 1 medium onion, finely chopped, 8 ounces cremini mushrooms, sliced, 2 cloves garlic, minced, 1 cup heavy cream, 1 teaspoon soy sauce, salt and pepper to taste
- Topping: 1 cup crispy fried onions
Instructions
- Preheat your oven to 350°F (175°C).
- Blanch the green beans in boiling salted water for 3-4 minutes until bright green and tender-crisp, then drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté for 5 minutes until translucent.
- Add the sliced mushrooms and garlic, cooking for an additional 5-7 minutes until the mushrooms are browned and tender.
- Stir in the heavy cream and soy sauce, seasoning with salt and pepper. Simmer for 2-3 minutes until slightly thickened.
- Combine the blanched green beans with the mushroom sauce in a large mixing bowl, then transfer to a greased 2-quart baking dish.
- Bake in the preheated oven for 25 minutes, then remove and sprinkle the crispy fried onions on top.
- Return to the oven and bake for an additional 10 minutes until the onions are golden brown and the casserole is bubbling.
