- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh raspberries
- ¼ cup raspberry puree
Instructions
- Preheat your oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter until crumbly, then press into the bottom of a 9-inch springform pan.
- Beat cream cheese until smooth, then add sugar and vanilla, mixing until blended.
- Add eggs one at a time, beating well after each addition, then mix in sour cream until smooth.
- Pour half of the batter onto the crust, swirl in raspberry puree and sprinkle fresh raspberries on top.
- Cover with the remaining batter and smooth the top.
- Bake for 50-60 minutes, until edges are set and center is slightly jiggly.
- Cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
