Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh raspberries
  • ¼ cup raspberry puree

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter until crumbly, then press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese until smooth, then add sugar and vanilla, mixing until blended.
  4. Add eggs one at a time, beating well after each addition, then mix in sour cream until smooth.
  5. Pour half of the batter onto the crust, swirl in raspberry puree and sprinkle fresh raspberries on top.
  6. Cover with the remaining batter and smooth the top.
  7. Bake for 50-60 minutes, until edges are set and center is slightly jiggly.
  8. Cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.

Notes

For best results, chill the cheesecake properly and consider making it a day before for enhanced flavor.
