- 1 cup dulce de leche
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking powder, cinnamon, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball slightly with your palm.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool completely on a wire rack.
- Sandwich two cookies together with a generous layer of dulce de leche.
Notes
For best results, use room temperature butter and mix dulce de leche to make spreading easier. Alternatively, you can use Nutella or peanut butter for variation.
