Description

Elegant Stuffed Leeks with Beef is a culinary masterpiece that combines the tender, slightly sweet flavor of leeks with a savory, juicy beef filling. Each bite offers a creamy texture that contrasts beautifully with the crispness of the leeks, creating a delightful sensory experience that is both comforting and sophisticated.

Ingredients

  • Leeks: 4 large leeks, trimmed and cleaned
  • Ground Beef: 1 pound, preferably grass-fed
  • Onion: 1 medium onion, finely chopped
  • Garlic: 3 cloves, minced
  • Breadcrumbs: 1 cup, preferably fresh
  • Parmesan Cheese: 1/2 cup, grated
  • Heavy Cream: 1/2 cup
  • Egg: 1 large, beaten
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Olive Oil: 2 tablespoons
  • Fresh Parsley: 2 tablespoons, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent, about 5 minutes.
  3. Add ground beef to the skillet, cooking until browned, approximately 7-10 minutes. Drain excess fat.
  4. In a large bowl, combine the cooked beef mixture with breadcrumbs, Parmesan cheese, heavy cream, beaten egg, salt, and pepper. Mix well.
  5. Prepare the leeks by cutting them in half lengthwise and blanching them in boiling water for 3-4 minutes until slightly tender. Drain and cool.
  6. Carefully stuff each leek half with the beef mixture, pressing gently to pack it in.
  7. Place the stuffed leeks in a baking dish, cover with foil, and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the tops are golden brown.
  9. Garnish with fresh parsley before serving.

Notes

  • Make-ahead: You can prepare the stuffed leeks a day in advance and store them in the refrigerator before baking.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • Substitutions: Ground turkey or chicken can be used instead of beef for a lighter option.
