Ingredients

  • 1 large whole wheat tortilla
  • 1 cup mixed greens
  • 1/2 cup roasted sweet potatoes, diced
  • 1/2 cup cooked quinoa
  • 1/4 cup shredded carrots
  • 1/4 cup sliced red bell pepper
  • 1/4 cup sliced avocado
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together maple syrup, apple cider vinegar, olive oil, salt, and pepper to make the dressing.
  2. Lay the whole wheat tortilla flat on a clean surface.
  3. Layer the mixed greens, roasted sweet potatoes, quinoa, carrots, bell pepper, and avocado on the tortilla.
  4. Drizzle the maple dressing over the vegetables.
  5. Wrap the tortilla tightly, folding in the sides as you roll it up.
  6. Slice the wrap in half and serve immediately or wrap in foil for later.
