Ingredients

- 1 large whole wheat tortilla
- 1 cup mixed greens
- 1/2 cup roasted sweet potatoes, diced
- 1/2 cup cooked quinoa
- 1/4 cup shredded carrots
- 1/4 cup sliced red bell pepper
- 1/4 cup sliced avocado
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together maple syrup, apple cider vinegar, olive oil, salt, and pepper to make the dressing.
- Lay the whole wheat tortilla flat on a clean surface.
- Layer the mixed greens, roasted sweet potatoes, quinoa, carrots, bell pepper, and avocado on the tortilla.
- Drizzle the maple dressing over the vegetables.
- Wrap the tortilla tightly, folding in the sides as you roll it up.
- Slice the wrap in half and serve immediately or wrap in foil for later.

- This wrap can be made ahead of time and stored in the refrigerator.
