Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1 packet taco seasoning
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add the chopped onion and bell pepper to the skillet and sauté until softened.
  4. Stir in the black beans, corn, diced tomatoes, cooked rice, and taco seasoning. Mix well.
  5. Transfer the mixture to a greased baking dish and top with shredded cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Let cool for a few minutes before serving. Enjoy!
