A delicious and easy-to-make Mexican casserole that the whole family will enjoy.
Ingredients

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 2 cups cooked rice
- 1 cup shredded cheese
- 1 packet taco seasoning
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion and bell pepper to the skillet and sauté until softened.
- Stir in the black beans, corn, diced tomatoes, cooked rice, and taco seasoning. Mix well.
- Transfer the mixture to a greased baking dish and top with shredded cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving. Enjoy!

- Feel free to add your favorite vegetables for extra nutrition.
- This casserole can be made ahead of time and stored in the refrigerator.
