  • For the Cheesecake Base:
    • 8 oz cream cheese, softened
    • 1/2 cup granulated sugar

    • 1/4 cup heavy cream
  • For the Blackberry Swirl:
    • 1 cup fresh blackberries
    • 1/4 cup granulated sugar
    • 1 tbsp lemon juice
  • For the Crust:
    • 1 cup graham cracker crumbs
    • 1/4 cup unsalted butter, melted
    • 2 tbsp granulated sugar

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of popsicle molds to form a crust.
  2. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  3. Add vanilla extract, sour cream, and heavy cream to the cream cheese mixture, and mix until well combined.
  4. In a small saucepan, combine blackberries, sugar, and lemon juice. Cook over medium heat for about 5 minutes until the blackberries break down and the mixture thickens slightly.
  5. Layer the cheesecake mixture and blackberry swirl in the popsicle molds, using a skewer to create a marbled effect.
  6. Insert sticks into the molds and freeze for at least 4 hours or until solid.
  7. To remove the pops, run warm water over the outside of the molds for a few seconds, then gently pull out the popsicles.
