- 8 oz cream cheese, softened

- 1 cup fresh blackberries
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- For the Crust:
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tbsp granulated sugar
Instructions
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of popsicle molds to form a crust.
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
- Add vanilla extract, sour cream, and heavy cream to the cream cheese mixture, and mix until well combined.
- In a small saucepan, combine blackberries, sugar, and lemon juice. Cook over medium heat for about 5 minutes until the blackberries break down and the mixture thickens slightly.
- Layer the cheesecake mixture and blackberry swirl in the popsicle molds, using a skewer to create a marbled effect.
- Insert sticks into the molds and freeze for at least 4 hours or until solid.
- To remove the pops, run warm water over the outside of the molds for a few seconds, then gently pull out the popsicles.
