- 1 1/2 cups almond flour
- 1/4 cup unsalted butter, melted
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1 large egg
- 4–5 fresh peaches, sliced
- 1 tablespoon lemon juice
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, melted butter, sugar, and salt until combined.
- Add the egg and mix until a dough forms.
- Press the dough into a tart pan evenly across the bottom and up the sides.
- Bake the crust for 10-12 minutes or until lightly golden.
- In another bowl, toss the sliced peaches with lemon juice, honey, and vanilla extract.
- Arrange the peach mixture over the baked crust.
- Bake for an additional 20-25 minutes until the peaches are tender.
- Allow to cool before serving.
Notes
- For a vegan option, substitute the egg with a flax egg.
- Serve with whipped cream or ice cream for added indulgence.
- Store leftovers in the refrigerator for up to 3 days.
