Ingredients

  • 4 ears of fresh corn, husked
  • 2 ripe avocados, diced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Boil the corn in salted water for about 5-7 minutes until tender.
  2. Remove the corn from the water and let it cool.
  3. Once cooled, cut the kernels off the cob and place them in a large bowl.
  4. Add the diced avocados, halved cherry tomatoes, chopped red onion, and cilantro to the bowl.
  5. Drizzle with lime juice and season with salt and pepper.
  6. Toss gently to combine all ingredients.
  7. Serve immediately or chill in the refrigerator for 30 minutes before serving.
