Instructions
- Prepare all vegetables by washing and dicing them into small pieces.
- In a large pot, combine the diced tomatoes, bell peppers, onions, jalapeños, and cilantro.
- Add lime juice and sugar to the pot, stirring well to combine.
- Bring the mixture to a boil over medium heat, stirring frequently.
- Once boiling, add the pectin and continue to boil for an additional 1-2 minutes.
- Remove from heat and let cool slightly before transferring to sterilized jars.
- Seal the jars and let them cool completely before storing in the refrigerator.
