- 4 chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, sliced
- 2 tablespoons brown sugar
- 1 tablespoon butter for carrots
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Coat the chicken breasts with the garlic herb mixture and place them in a baking dish.
- Bake the chicken for 25-30 minutes or until cooked through.
- Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and mash them with milk and butter until smooth.
- In a skillet, melt butter and add sliced carrots, cooking for 5 minutes.
- Add brown sugar to the carrots and cook until glazed, about 5 more minutes.
- Serve the garlic herb chicken with mashed potatoes and glazed carrots on the side.
Notes
- For extra flavor, marinate the chicken for a few hours before cooking.
- Feel free to add other herbs like parsley or oregano.
- Adjust the sweetness of the glazed carrots to your preference.
