Description

A delicious and aromatic dish featuring roasted chicken and vegetables seasoned with garlic and herbs.


Ingredients

  • 1 whole chicken (about 45 lbs)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups mixed vegetables (carrots, potatoes, bell peppers)
  • 1 lemon, halved

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix together the minced garlic, olive oil, rosemary, thyme, salt, and pepper.
  3. Rub the garlic herb mixture all over the chicken, including under the skin.
  4. Place the chicken in a roasting pan and surround it with the mixed vegetables.
  5. Squeeze the lemon halves over the chicken and place them inside the cavity.
  6. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for 10 minutes before carving and serving with the roasted vegetables.

Notes

  • For extra flavor, marinate the chicken in the herb mixture for a few hours or overnight.
  • Feel free to use any seasonal vegetables you prefer.
  • Leftovers can be stored in the refrigerator for up to 3 days.
