Instructions

  1. Preheat your oven to 425°F (220°C).

  6. Roast the lamb in the preheated oven for 20 minutes, then reduce the temperature to 350°F (175°C) and continue roasting for an additional 1 hour and 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
