- 2 lb baby potatoes
- 6 strips bacon
- 1 cup chopped onions
- 1/2 cup chopped shallots
- 1/4 cup chopped chives
- 1/4 cup apple cider vinegar
- 2 tbsp German or yellow mustard
- 1/4 cup olive oil
- Salt to taste
- Pepper to taste
Instructions
- Boil the potatoes in a heavy-bottomed pot filled with salted water until fork-tender, about 15 minutes. Drain and allow to cool slightly.
- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate.
- Sauté the chopped onions and shallots in the same skillet until softened, about 4-5 minutes.
- Mix the dressing by whisking together vinegar, mustard, olive oil, salt, and pepper in a bowl.
- Slice the cooled baby potatoes in half or quarters and transfer to a mixing bowl.
- Combine warm potatoes, crispy bacon, sautéed onions, shallots, and chives.
- Dress the mixture with the dressing and toss gently to coat without breaking the potatoes.
- Serve warm or chilled, garnished with extra chives if desired.
