Ingredients

  • 2 lb baby potatoes
  • 6 strips bacon
  • 1 cup chopped onions
  • 1/2 cup chopped shallots
  • 1/4 cup chopped chives
  • 1/4 cup apple cider vinegar
  • 2 tbsp German or yellow mustard
  • 1/4 cup olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the potatoes in a heavy-bottomed pot filled with salted water until fork-tender, about 15 minutes. Drain and allow to cool slightly.
  2. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate.
  3. Sauté the chopped onions and shallots in the same skillet until softened, about 4-5 minutes.
  4. Mix the dressing by whisking together vinegar, mustard, olive oil, salt, and pepper in a bowl.
  5. Slice the cooled baby potatoes in half or quarters and transfer to a mixing bowl.
  6. Combine warm potatoes, crispy bacon, sautéed onions, shallots, and chives.
  7. Dress the mixture with the dressing and toss gently to coat without breaking the potatoes.
  8. Serve warm or chilled, garnished with extra chives if desired.
