Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • Chocolate chips (for eyes)
  • Lollipop sticks

Instructions

  1. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat the egg whites until foamy.
  3. Add the cream of tartar and continue to beat until soft peaks form.
  4. Gradually add the sugar, one tablespoon at a time, while beating until stiff peaks form and the mixture is glossy.
  5. Mix in the vanilla extract.
  6. Transfer the meringue to a piping bag fitted with a round tip.
  7. Pipe ghost shapes onto the prepared baking sheet, making sure to leave space between each one.
  8. Insert a lollipop stick into the bottom of each ghost.
  9. Place chocolate chips on the meringues for eyes.
  10. Bake for 1.5 to 2 hours, or until the meringues are dry and can be easily lifted off the parchment.
  11. Turn off the oven and let the meringues cool completely inside.
