  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup pumpkin puree
  • 1/4 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
  4. In a separate bowl, combine the pumpkin puree, heavy cream, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Turn the dough onto a floured surface and gently knead it a few times. Pat it into a circle about 1 inch thick.
  7. Cut the dough into wedges and place them on the prepared baking sheet.
  8. Bake for 15-20 minutes or until golden brown.
