Ingredients
- Potatoes: 2 pounds, peeled and diced

- Feta cheese: 1 cup, crumbled
- Fresh parsley: 1/4 cup, chopped
- Olive oil: 1/3 cup
- Lemon juice: 1/4 cup
- Dijon mustard: 1 tablespoon

Instructions
- In a large pot, bring salted water to a boil over medium-high heat.
