- 4 boneless, skinless chicken breasts
- 1 cup salsa verde
- 1 cup shredded pepper Jack cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your grill to medium-high heat.
- Combine the chicken breasts with the salsa verde in a bowl and let marinate for at least 30 minutes.
- Season the chicken with salt and pepper.
- Drizzle olive oil on the grill grates to prevent sticking.
- Grill the chicken for about 6-8 minutes on each side, until fully cooked.
- Add the pepper Jack cheese on top during the last couple of minutes and close the grill lid to melt.
- Remove from the grill, garnish with cilantro if desired, and let rest for five minutes before slicing.
Notes
Marinate chicken overnight for maximum flavor. This recipe can also be adapted for the oven or air fryer.
