- 4 cups green tomatoes, chopped

- 1 cup bell pepper, chopped
- 2 cups sugar
- 1 cup vinegar
- 1 tablespoon salt
- 1 teaspoon mustard seeds
- 1 teaspoon celery seeds
- 1 teaspoon turmeric
Instructions
- In a large pot, combine the chopped green tomatoes, onion, and bell pepper.
- Add sugar, vinegar, and salt to the pot and stir well.
- Bring the mixture to a boil over medium heat.
- Reduce heat and let it simmer for about 30 minutes, stirring occasionally.
- Add mustard seeds, celery seeds, and turmeric, and mix well.
- Continue to simmer for another 10 minutes.
- Pour the relish into sterilized jars and seal tightly.
- Let it cool before storing in the refrigerator.

- For a spicier relish, add chopped jalapeños or red pepper flakes.
