Instructions

  1. Preheat your grill to medium-high heat (about 400°F).
  2. Season the chicken breasts with salt, pepper, and a drizzle of olive oil.
  3. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the juices run clear.
  4. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, garlic, salt, and pepper to create the dressing.
  6. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and olives.
