- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 1/2 cup heavy cream
- 2 tablespoons honey
- 1 teaspoon vanilla extract
Instructions
- Preheat the grill to medium heat.
- Brush the peach halves with olive oil and grill for about 4-5 minutes on each side until tender and caramelized.
- In a bowl, mix flour, baking powder, salt, and sugar.
- Add heavy cream to the dry ingredients and mix until a dough forms.
- Shape the dough into shortcakes and place them on the grill for about 3-4 minutes on each side until golden brown.
- In another bowl, whip the heavy cream, honey, and vanilla extract until soft peaks form.
- Assemble the shortcakes by placing a grilled peach half on top of each shortcake and dolloping with honey whipped cream.
Notes
- For added flavor, sprinkle cinnamon on the peaches before grilling.
- Shortcakes can be made ahead of time and stored in an airtight container.
