Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup heavy cream
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the peach halves with olive oil and grill for about 4-5 minutes on each side until tender and caramelized.
  3. In a bowl, mix flour, baking powder, salt, and sugar.
  4. Add heavy cream to the dry ingredients and mix until a dough forms.
  5. Shape the dough into shortcakes and place them on the grill for about 3-4 minutes on each side until golden brown.
  6. In another bowl, whip the heavy cream, honey, and vanilla extract until soft peaks form.
  7. Assemble the shortcakes by placing a grilled peach half on top of each shortcake and dolloping with honey whipped cream.
