Instructions
Step 1: Grill the Pineapple 🔥
Preheat your grill (or grill pan) to medium-high heat. Brush each pineapple ring or chunk with coconut oil or butter. Sprinkle with brown sugar for extra caramelization, if desired.
Grill for 2–3 minutes per side, until grill marks appear and the pineapple is golden and slightly charred. Remove from grill and let cool slightly.
Step 2: Make Pineapple Juice 🍍
Take about 1½ to 2 cups of the grilled pineapple and place it in a blender. Blend until smooth. Strain through a fine mesh sieve or cheesecloth to get your grilled pineapple juice. Set aside.
Step 3: Mix the Punch 🍹
In a large pitcher, combine:
-
Grilled pineapple juice
-
Dark rum
-
Coconut rum
-
Orange juice
-
Lime juice
-
Simple syrup
Stir until everything is well mixed. Taste and adjust sweetness or acidity as needed.
Step 4: Chill and Fizz 🧊
Refrigerate for at least 30 minutes, or up to 4 hours, to chill. Just before serving, add the ginger ale or club soda for a fizzy finish.
Step 5: Serve and Garnish ✨
Fill glasses with ice. Pour the punch into each glass. Garnish with grilled pineapple chunks, mint sprigs, a cherry, or a lime wheel. For extra flair, rim the glass with Tajin or sugar before pouring.
Notes
-
Use fully ripe pineapple for maximum sweetness and juice.
-
Don’t skip the grill—grilled pineapple is the secret weapon that makes this cocktail so special.
-
If you’re short on time, use high-quality canned pineapple juice, but note that you’ll miss out on the smoky element.
