Ingredients

- 3 tablespoons za’atar spice mix
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste

- Fresh herbs (optional, for garnish)
Instructions
- Prepare the Marinade: In a mixing bowl, whisk together the za’atar spice mix, olive oil, lemon juice, salt, and pepper until smooth.
- Marinate the Tofu: Add the cubed tofu to the marinade. Let it sit for at least 30 minutes.
- Skewer Up: Thread marinated tofu onto the skewers, alternating with vibrant vegetables.
- Get Grilling: Preheat your grill to medium heat.
- Grill to Perfection: Cook the skewers for 10-15 minutes, turning occasionally.
- Serve Warm: Remove the skewers from the grill, garnish with fresh herbs, and serve with lemon wedges.
Notes
Press tofu well to remove excess moisture. Feel free to swap in seasonal produce or your favorites.
