Ingredients

  • 6 large eggs
  • 1 ripe avocado
  • 2 tablespoons lime juice
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Hard boil the eggs by placing them in a pot of water and bringing it to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
  2. Cool the eggs in ice water, then peel and slice them in half lengthwise.
  3. Remove the yolks and place them in a bowl. Add the avocado, lime juice, red onion, cilantro, garlic powder, salt, and pepper.
  4. Mash the mixture until smooth and well combined.
  5. Fill the egg whites with the guacamole mixture using a spoon or piping bag.
  6. Garnish with additional cilantro or a sprinkle of paprika if desired.
  7. Serve immediately or refrigerate until ready to serve.

Notes

  • For a spicier version, add diced jalapeños to the filling.
