A delicious herb-crusted pork loin served with a sweet and tangy apple compote, perfect for a special dinner.

- 2 lbs pork loin
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 apples, peeled and diced
- 1/4 cup brown sugar
- 1/2 cup apple cider
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix olive oil, rosemary, thyme, garlic, salt, and pepper.
- Rub the herb mixture all over the pork loin.
- Place the pork loin in a roasting pan and roast for about 1 hour, or until the internal temperature reaches 145°F (63°C).
- While the pork is roasting, prepare the apple compote by combining apples, brown sugar, apple cider, and lemon juice in a saucepan.
- Cook over medium heat until the apples are tender and the mixture is thickened, about 15 minutes.
- Once the pork is done, let it rest for 10 minutes before slicing.
- Serve the sliced pork with the apple compote on top.
Notes
- For a spicier flavor, add a pinch of cayenne pepper to the herb mixture.
- Leftover pork can be stored in the refrigerator for up to 3 days.
- This dish pairs well with roasted vegetables or mashed potatoes.
