Description

A delicious herb-crusted pork loin served with a sweet and tangy apple compote, perfect for a special dinner.


Ingredients

  • 2 lbs pork loin
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 apples, peeled and diced
  • 1/4 cup brown sugar
  • 1/2 cup apple cider
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, rosemary, thyme, garlic, salt, and pepper.
  3. Rub the herb mixture all over the pork loin.
  4. Place the pork loin in a roasting pan and roast for about 1 hour, or until the internal temperature reaches 145°F (63°C).
  5. While the pork is roasting, prepare the apple compote by combining apples, brown sugar, apple cider, and lemon juice in a saucepan.
  6. Cook over medium heat until the apples are tender and the mixture is thickened, about 15 minutes.
  7. Once the pork is done, let it rest for 10 minutes before slicing.
  8. Serve the sliced pork with the apple compote on top.

Notes

  • For a spicier flavor, add a pinch of cayenne pepper to the herb mixture.
  • Leftover pork can be stored in the refrigerator for up to 3 days.
  • This dish pairs well with roasted vegetables or mashed potatoes.
