Ingredients

  • 1 cup cherry tomatoes, halved or quartered
  • Flaky sea salt, to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Toast the slices of bread until golden brown and crispy.
  2. In a mixing bowl, fold the ricotta cheese with the chopped herbs until well combined.
  3. Spread a generous layer of the herbed ricotta onto each toasted bread slice.
  4. Top each slice with the halved cherry tomatoes, arranging them artfully.
  5. Optional: Drizzle a little olive oil over the tomatoes.
  6. Finish by sprinkling flaky sea salt over each toast.
  7. Serve immediately while warm.

Notes

Choose fresh, ripe tomatoes and avoid stale bread for the best results. You can make the herbed ricotta a day in advance.
