- 4 slices good quality bread
- 1 cup ricotta cheese
- 1 tablespoon fresh chopped basil (or parsley)
- 1 cup cherry tomatoes, halved or quartered
- Flaky sea salt, to taste
- 1 tablespoon olive oil (optional)
Instructions
- Toast the slices of bread until golden brown and crispy.
- In a mixing bowl, fold the ricotta cheese with the chopped herbs until well combined.
- Spread a generous layer of the herbed ricotta onto each toasted bread slice.
- Top each slice with the halved cherry tomatoes, arranging them artfully.
- Optional: Drizzle a little olive oil over the tomatoes.
- Finish by sprinkling flaky sea salt over each toast.
- Serve immediately while warm.
Notes
Choose fresh, ripe tomatoes and avoid stale bread for the best results. You can make the herbed ricotta a day in advance.
