Ingredients

- 1 lb chicken breast, diced
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat until shimmering.
- Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Brown the diced chicken breast until cooked through, about 5-6 minutes.
- Add the sliced mushrooms and sauté for another 3-4 minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15-20 minutes.
- Finish with heavy cream and season with salt and pepper. Simmer for an additional 5-10 minutes.
- Garnish with fresh thyme or parsley and serve.
Notes
Make ahead and store in the fridge for up to 3 days or freeze for up to 2 months. Omit cream if freezing; add when reheating.
