Ingredients

  • 1 lb chicken breast, diced
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  3. Brown the diced chicken breast until cooked through, about 5-6 minutes.
  4. Add the sliced mushrooms and sauté for another 3-4 minutes.
  5. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15-20 minutes.
  6. Finish with heavy cream and season with salt and pepper. Simmer for an additional 5-10 minutes.
  7. Garnish with fresh thyme or parsley and serve.

Notes

Make ahead and store in the fridge for up to 3 days or freeze for up to 2 months. Omit cream if freezing; add when reheating.
