- 2 cups mashed potatoes
- 1/2 cup milk, warmed
- 1/4 cup butter, melted
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 teaspoons active dry yeast
- 4 cups all-purpose flour
- 1 egg (optional, for egg wash)
Instructions
- Combine the mashed potatoes, warmed milk, melted butter, sugar, and salt in a large mixing bowl.
- Sprinkle the active dry yeast across the mixture and let it bloom for about 5 minutes.
- Gradually mix in the flour, one cup at a time, until a soft dough forms.
- Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a kitchen towel, and let it rise for about an hour, or until doubled in size.
- Once risen, punch down the dough and shape it into golf ball-sized rolls.
- Arrange the rolls on a parchment-lined baking sheet and allow them to rise for another 30 minutes.
- Preheat your oven to 375°F (190°C) and brush the tops of the rolls with the beaten egg if desired.
- Bake for 20-25 minutes or until golden brown.
Notes
For a make-ahead option, prepare the dough the night before and refrigerate until the next day.
