Description
Delicious homemade strawberry shortcake ice cream bars made with fresh strawberries and a creamy ice cream base.
Ingredients

- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup sugar
- 1 cup heavy cream
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 cup crushed shortbread cookies
- 1/4 cup melted butter
Instructions
- In a bowl, mix sliced strawberries with sugar and let sit for 30 minutes.
- In another bowl, whisk together heavy cream, whole milk, and vanilla extract until well combined.
- Fold the macerated strawberries into the cream mixture.
- In a separate bowl, combine crushed shortbread cookies and melted butter.
- Layer the cookie mixture at the bottom of a mold, then pour in the strawberry ice cream mixture.
- Freeze for at least 4 hours or until solid.
- Remove from the mold and cut into bars. Serve and enjoy!
Notes
- For a richer flavor, use more heavy cream.
- Feel free to substitute strawberries with other berries.
- Store any leftovers in an airtight container in the freezer.
