Description

Delicious homemade strawberry shortcake ice cream bars made with fresh strawberries and a creamy ice cream base.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup sugar
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup crushed shortbread cookies
  • 1/4 cup melted butter

Instructions

  1. In a bowl, mix sliced strawberries with sugar and let sit for 30 minutes.
  2. In another bowl, whisk together heavy cream, whole milk, and vanilla extract until well combined.
  3. Fold the macerated strawberries into the cream mixture.
  4. In a separate bowl, combine crushed shortbread cookies and melted butter.
  5. Layer the cookie mixture at the bottom of a mold, then pour in the strawberry ice cream mixture.
  6. Freeze for at least 4 hours or until solid.
  7. Remove from the mold and cut into bars. Serve and enjoy!

Notes

  • For a richer flavor, use more heavy cream.
  • Feel free to substitute strawberries with other berries.
