Description

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/3 cup honey
  • 1/4 cup butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a muffin tin.
  2. Whisk together the cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  3. In another bowl, whisk together the milk, eggs, honey, and melted butter until smooth.
  4. Pour the wet ingredients into the dry mixture and gently fold the batter with a rubber spatula.
  5. Spoon the batter into muffin cups, filling each about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  7. Cool the muffins in the tin for a few minutes before transferring to a wire rack.
