- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/3 cup honey
- 1/4 cup butter, melted
Instructions
- Preheat your oven to 400°F (200°C) and grease a muffin tin.
- Whisk together the cornmeal, flour, sugar, baking powder, and salt in a large bowl.
- In another bowl, whisk together the milk, eggs, honey, and melted butter until smooth.
- Pour the wet ingredients into the dry mixture and gently fold the batter with a rubber spatula.
- Spoon the batter into muffin cups, filling each about 2/3 full.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Cool the muffins in the tin for a few minutes before transferring to a wire rack.

These muffins can be stored in an airtight container at room temperature for up to three days or frozen for up to three months.
