Description

Indulge in the ultimate comfort treat with these Hot Chocolate Stuffed Chocolate Cookies. Each bite reveals a gooey, melty center reminiscent of rich hot chocolate, while the outer cookie is soft and chewy, with a deep chocolate flavor that envelops your senses.

Ingredients

Scale
  • For the Cookie Dough:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 cup brown sugar, packed
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 3 cups all-purpose flour
    • 1 cup unsweetened cocoa powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 2 cups semi-sweet chocolate chips
  • For the Hot Chocolate Filling:
    • 1 cup mini marshmallows
    • 1 cup hot chocolate mix

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chocolate chips.
  7. To assemble, scoop a tablespoon of cookie dough, flatten it, and place a teaspoon of hot chocolate mix and a few mini marshmallows in the center. Enclose the filling with the dough and roll into a ball.
  8. Place the cookie balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, until the edges are set but the centers are still soft. They will continue to cook on the baking sheet.
  10. Let cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

  • Make-ahead: You can prepare the cookie dough and refrigerate it for up to 3 days before baking.
  • Storage: Store cookies in an airtight container at room temperature for up to 5 days.
  • Substitutions: Use dairy-free chocolate chips for a vegan option, or replace the hot chocolate mix with homemade cocoa powder and sugar mixture.
