- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1/4 cup brewed espresso, cooled
- Cocoa powder for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing well.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until combined.
- Grease a muffin tin and scoop the cookie dough into each cup, pressing down to form a cup shape.
- Bake for 10-12 minutes, then let cool completely.
- In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
- Fold in the mascarpone cheese and cooled espresso until smooth.
- Fill each cookie cup with the tiramisu filling.
- Dust with cocoa powder before serving.
Notes
- For a stronger coffee flavor, use more espresso.
- These cookie cups can be made a day in advance and stored in the refrigerator.
- Feel free to add chocolate shavings on top for extra decoration.
